Black Bean Chocolate Cake

Hi there!

"Black bean cake?! That sounds awful"

Not the adventurous type? That's fine. Go right along and pretend this post doesn't exist. For those of you who enjoy a little creativity, please continue!

I love this cake. It hits my craving for chocolate without making me feel completely guilty. What's even better is when I feed it to people without telling them it's made of black beans and watch them freak out afterwards. Yeah, I can be an asshole. But I'm an asshole who feeds people chocolate...so I'm kind of an awesome asshole.

I found this recipe online and tweaked it just a tad. Credit goes to MindOverMunch.com!

There are quite a few ingredients but it is worth it in the end. Also, if you do not have a food processor, I highly suggest investing in one. They are worth every penny.

Ingredients:

1 can of black beans (drained and rinsed)
2 whole eggs
2 tbsp. egg whites
1 tbsp. coconut oil
2 tbsp. almond butter
1/2 cup of cocoa powder
1/4 tsp salt
1 tsp vanilla
2/3 cup of honey
1/5 tsp baking powder
handful of chocolate chips (optional)

Throw everything into the food processor (or blender) besides the chocolate chips and let that baby swirl until everything is well blended.

Pour into a greased 8x8 pan (I greased with coconut oil). Sprinkle the chocolate chips over the mixture.

Put it into a 350 deg oven.

Now, the instructions say to leave it in there for 15 minutes but mine took about 30 to completely cook (I used a different sized pan--so just keep your eye on it)


 
 
I put leftovers into the fridge and eat it cold when I'm in a rush. Otherwise, I recommend putting it into the microwave for a few seconds....SOOO good when it's hot.
 
Top it with some fruit and cool whip and you're good to go my friend!
